Every year the European buffet represents an invitation to a culinary journey across Europe, and each year its success is guaranteed. Despite the difficulties the delegations always find a way to transport, bring, cook and present their country’s or their region’s Christmas specialities – and as you approach the buffet you see an amazing diversity of dishes.
But this amazing feat can be achieved only because the students and teachers who are there totally devote themselves to the preparation of their specialities; and during this time the activity in the kitchens resembles that in a bee-hive, and you witness what looks like a ballet performed by students wearing chefs’ hats.
In Poznan tradition was followed to the letter, and when the European buffet was declared open it was good to see diners crowding around the various ‘trips’ of this European culinary tour. And as usual a good number of dishes were started but not completely finished, enabling them to be served to the students in the course of the following days.
