A hotel school really has to pull out all the stops as far as catering is concerned, in order to satisfy its guests, even if there are more than 600 of them!
Buffets were served in the Dante, Aurelia and Doge hotels or in the gymnasium of the IPSEOA for the judges. Sometimes you needed to wear a bracelet, sometimes not.

On the evening of October 7th the organisers had scheduled a dinner at the Casa delle Aïe, outside Cervia. They planned to accommodate more than 600 guests in different dining halls and the organisers simply indicated on a notice board at the entrance the location of the table for such and such a delegation.
At midday on October 9th the delegates taking part in the Ravenna excursion found themselves in the Campaza restaurant not far from Ravenna, close to a fun-fair. There again, with no jostling, the guests were seated around tables in the vast dining hall.
